Ingredients
Scale
- 3–4 boneless, skinless chicken breasts
- 1 cup shredded Jack cheese
- 2 tablespoons olive oil
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- Salt and pepper to taste
- Chopped green onions and paprika for topping
Instructions
- Preheat your oven to 375°F (190°C).
- Rub olive oil all over the chicken breasts and season with salt and pepper.
- In a skillet over medium-high heat, sear the seasoned chicken until golden brown on both sides, about 5 minutes for each side.
- Add the minced garlic and let it cook for about 30 seconds until fragrant.
- Pour in the chicken broth and allow it to simmer, scraping the bottom of the pan to incorporate the flavorful bits.
- Stir in the sour cream until well blended, letting the mixture bubble for around 5 minutes.
- Top each chicken breast with shredded Jack cheese and place the skillet in the preheated oven.
- Bake for about 15 minutes or until the cheese is melted and bubbly.
- Finish with a sprinkle of chopped green onions and paprika right before serving.
Notes
For additional flavor, consider marinating the chicken in olive oil and garlic for an hour before cooking. You can substitute different cheeses or use dairy-free sour cream.
