- 1 lb chicken breast, diced
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup sour cream
- 1 cup Gruyère or Swiss cheese, shredded
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat a splash of olive oil over medium heat. Add the onions and caramelize for about 15 minutes.
- Add the minced garlic and diced chicken, cooking until the chicken is no longer pink.
- In a large mixing bowl, combine the cooked rice, chicken mixture, chicken broth, sour cream, salt, and pepper.
- Pour the mixture into a baking dish and sprinkle cheese on top.
- Bake for 25-30 minutes or until the cheese is melted and bubbly.
