Description

A comforting and budget-friendly dish combining caramelized onions, tender chicken, and creamy goodness, perfect for family gatherings and weeknight meals.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 cup Gruyère or Swiss cheese, shredded
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat a splash of olive oil over medium heat. Add the onions and caramelize for about 15 minutes.
  3. Add the minced garlic and diced chicken, cooking until the chicken is no longer pink.
  4. In a large mixing bowl, combine the cooked rice, chicken mixture, chicken broth, sour cream, salt, and pepper.
  5. Pour the mixture into a baking dish and sprinkle cheese on top.
  6. Bake for 25-30 minutes or until the cheese is melted and bubbly.
  7. Serve hot and enjoy!

Notes

For a vegetarian option, swap chicken for vegetables or use quinoa instead of rice. Leftovers can be stored in an airtight container for up to 3 days.
