These quick and easy chicken enchiladas are packed with flavor, featuring shredded chicken, gooey cheese, and enchilada sauce, all wrapped in soft tortillas.

- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup enchilada sauce
- 8 corn or flour tortillas
- 1/2 cup diced onion (optional)
- 1/2 cup sour cream (for serving)
- Chopped cilantro (for garnish, optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the shredded chicken, half of the cheese, and half of the enchilada sauce.
- Take a tortilla, add a portion of the chicken mixture, and roll it up. Place it seam-side down in a baking dish.
- Repeat until all tortillas are filled.
- Pour the remaining enchilada sauce over the rolled tortillas and top with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly.
- Serve hot with sour cream and garnish with chopped cilantro if desired.
Notes
Warm tortillas beforehand to prevent cracking. For extra flavor, add spices like cumin or chili powder, or try different proteins and cheese blends.
