- 1 small onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (15 oz) tomato sauce
- 2 cups beef broth
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 2–3 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- Toppings: Shredded cheese, sour cream, green onions, avocado slices, tortilla chips
Instructions
- Prep Your Ingredients: Dice the onion and bell pepper, mince the garlic, and have everything ready to go.
- Brown the Meat: In a large pot, brown the ground beef (or turkey) over medium heat until fully cooked. Drain any excess fat.
- Sauté the Vegetables: Add the onion, bell pepper, and garlic to the pot. Cook until the onions are translucent.
- Build the Base: Stir in the chili powder, cumin, paprika, cayenne, salt, and pepper. Cook for an additional 1-2 minutes to enhance the flavors.
- Add the Tomatoes and Broth: Mix in the diced tomatoes and tomato sauce, followed by the beef broth.
- Let It Simmer: Bring the chili to a gentle boil, then reduce heat and let it simmer for at least 30 minutes, stirring occasionally.
- Add the Beans: Stir in the kidney and pinto beans. Cook for an additional 10 minutes.
- Taste and Adjust: Take a moment to taste your chili and adjust seasoning if needed.
- Serve and Enjoy: Ladle into bowls and top with your favorite toppings like cheese, sour cream, or avocado slices.
