- 1 lb ground beef or chicken
- 1 can black beans, rinsed and drained
- 1 cup corn, drained
- 1 cup salsa

- 1 cup shredded cheese
- 1 avocado, diced
- 1 cup diced tomatoes
- Lettuce for topping
Instructions
- Cook the rice according to package instructions.
- In a skillet, cook the ground beef or chicken over medium heat until browned. Drain any excess fat.
- Stir in the black beans, corn, salsa, chili powder, and cumin. Cook for 5-7 minutes until heated through.
- In bowls, layer the cooked rice, meat mixture, cheese, diced tomatoes, avocado, and lettuce.
