Description

A delicious and filling meal combining the hearty feel of a rice bowl with the vibrant flavors of tacos.


Ingredients

  • 1 cup rice
  • 1 lb ground beef or chicken
  • 1 can black beans, rinsed and drained
  • 1 cup corn, drained
  • 1 cup salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 1 cup diced tomatoes
  • Lettuce for topping

Instructions

  1. Cook the rice according to package instructions.
  2. In a skillet, cook the ground beef or chicken over medium heat until browned. Drain any excess fat.
  3. Stir in the black beans, corn, salsa, chili powder, and cumin. Cook for 5-7 minutes until heated through.
  4. In bowls, layer the cooked rice, meat mixture, cheese, diced tomatoes, avocado, and lettuce.
  5. Serve warm and enjoy!
