Description

A delightful fusion dish that combines the comforting elements of a hearty rice bowl with the vibrant flavors of classic tacos. Quick, customizable, and perfect for family dinners or casual gatherings.


Ingredients

  • 1 cup rice
  • 1 cup cooked chicken (or beans for a vegetarian option)
  • 1 cup black beans
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 avocado
  • 1 packet taco seasoning
  • Sour cream (optional)
  • Lettuce (optional)

Instructions

  1. Cook the rice according to package instructions until fluffy and tender.
  2. In a pan, warm up the cooked chicken (or beans) over medium heat, and stir in the taco seasoning until well coated.
  3. In serving bowls, layer the cooked rice, the seasoned chicken (or beans), followed by black beans, corn, and diced tomatoes.
  4. Finish the bowls off with shredded cheese and fresh avocado slices. Add sour cream if desired.
  5. Serve with a side of fresh lettuce for some crunch.

Notes
