Description

Delightful little cookie cups filled with luscious cream cheese frosting, perfect for any celebration.


Ingredients

Scale
  • 3/4 cup salted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Sprinkles (for decoration)
  • 2 ounces cream cheese, softened
  • 3 cups powdered sugar
  • 1/4 cup butter
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • Pink or red food coloring gel (optional)

Instructions

  1. Preheat your oven to 350°F and grease two muffin pans with nonstick cooking spray.
  2. Cream together the softened butter and granulated sugar in a large bowl using an electric mixer until light and fluffy, about 3-4 minutes.
  3. Add in the egg, vanilla extract, and almond extract. Beat until smooth and combined.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and baking soda.
  5. Gradually mix the dry ingredients into the wet ingredients until a dough forms, being careful not to over-mix.
  6. Press about 2 tablespoons of dough into the bottom and halfway up the sides of each muffin cup.
  7. Bake for about 12 minutes, or until the edges are lightly golden. Let cool for at least 15 minutes.
  8. Press the back of a tablespoon into the center of each cookie cup to create a well for frosting. Let cool completely.
  9. In a medium bowl, beat together the softened cream cheese and butter until smooth. Gradually mix in powdered sugar, vanilla extract, and milk until you reach a spreadable consistency. Add food coloring gel if desired.
  10. Use a piping bag to swirl the frosting into each cooled cookie cup or spoon it in. Top with sprinkles if you like!

Notes

Make sure butter is softened but not melted for best results.
