- 1 pound lean ground beef
- 8 ounces penne or fusilli pasta
- 1 cup heavy cream (or half-and-half)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup low-sodium vegetable broth
- 1 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large skillet over medium heat, heat the olive oil. Sauté the diced onion until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another minute.
- Add the ground beef to the skillet. Cook until it is browned, about 6 to 8 minutes. Season with salt and pepper.
- While the beef cooks, boil salted water in a separate pot. Cook the pasta according to the package instructions until al dente. Drain and set aside.
- Pour the vegetable broth into the skillet with the cooked beef. Stir in the heavy cream and let it simmer for about 3 minutes until slightly thickened.
- Stir in the Parmesan cheese until it melts smoothly into the sauce.
- Combine the cooked pasta with the sauce in the skillet, stirring gently to coat. Adjust seasoning if necessary.
- Serve immediately with extra Parmesan on top.
Notes
For a healthier option, use ground turkey or chicken instead of beef. Add vegetables for extra nutrition.
