Description

A comforting and nutritious spinach and white bean soup that’s quick to prepare and perfect for chilly evenings or a healthy lunch.


Ingredients

  • 2 cups fresh spinach
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Red pepper flakes for heat

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Incorporate the white beans and vegetable broth, bringing the mixture to a boil.
  3. Lower the heat and let it simmer for about 10 minutes, allowing the flavors to meld.
  4. Next, stir in the fresh spinach, cooking just until it wilts.
  5. Finally, season with salt, pepper, and optional red pepper flakes to taste.
  6. Serve the soup hot and enjoy your wholesome, hearty bowl!

Notes

For a heartier soup, add diced potatoes or carrots. This soup is vegan and can be enhanced with a sprinkle of grated Parmesan cheese or a dollop of yogurt.
