Description

A delightful twist on traditional banana bread, this Snickerdoodle Banana Bread combines the flavors of cinnamon and sugar with ripe bananas for a sweet treat that’s easy to make.


Ingredients

  • 3 ripe bananas, mashed
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup unsalted butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ cup milk
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a loaf pan by greasing and flouring it, or lining it with parchment paper.
  2. Mash the bananas in a large mixing bowl until smooth.
  3. Add the granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Stir until fully combined.
  4. In a separate bowl, combine the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix gently until just combined.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Sprinkle the cinnamon-sugar topping evenly over the batter.
  8. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  9. Let the bread rest in the pan for about 10 minutes before transferring to a wire rack. Slice and enjoy!

Notes

For a dairy-free version, substitute unsalted butter with coconut oil, or use whole wheat flour for added nutrition.
