Description
A cozy, tomatoey, and simplified version of traditional cabbage rolls made in a slow cooker.

- 1 pound ground beef
- 1 yellow onion, diced
- 1 small head green cabbage, chopped
- 14-ounce can petite diced tomatoes
- 6-ounce can tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 2 teaspoons dried parsley
- 1/4 teaspoon red pepper flakes
- 1 teaspoon kosher salt
- 1/2 cup water
Instructions
- Heat a large skillet over medium-high and add the ground beef. Brown until just slightly pink remains. Drain any excess fat.
- Add the diced yellow onion to the skillet along with the dried thyme, dried parsley, red pepper flakes, and kosher salt. Cook until the onion softens, about 3–4 minutes.
- Transfer the beef and onion mixture to the slow cooker. Add the chopped green cabbage on top.
- In a mixing bowl, stir together the petite diced tomatoes, tomato paste, Worcestershire sauce, and 1/2 cup water until well combined.
- Pour the sauce evenly over the meat and cabbage in the slow cooker. Gently stir to combine.
- Cover and cook on LOW for 6–8 hours, or until the cabbage is tender. Taste and adjust seasoning before serving.
Notes
Browning the beef builds flavor. For a thicker sauce, remove the lid for the last 30 minutes of cooking.
