- 1 lb Boneless Chicken Breasts or Thighs
- 2 cups Corn (fresh grilled, frozen, or canned)
- 4 oz Cream Cheese
- 1/3 cup Cotija Cheese (or feta as a substitute)
- 1 Lime (freshly squeezed)
- 2 cloves Garlic (minced)
- 1/2 tsp Chili Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Onion Powder
- Fresh Cilantro (optional)
Instructions
- Prepare the Slow Cooker: Coat your slow cooker with cooking spray or a little olive oil.
- Season the Chicken: Place the chicken in the cooker and season with chili powder, smoked paprika, onion powder, salt, and pepper.
- Add the Corn and Cheese: Pour in the corn and spread the cream cheese over the top.
- Squeeze in Lime Juice: Sprinkle the freshly squeezed lime juice over everything.
- Add Garlic: Toss in the minced garlic.
- Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
- Shred and Mix: About 30 minutes before serving, shred the chicken and mix everything together.
- Finish with Cheese: Top with Cotija cheese and fresh cilantro if desired.
