Description

A hearty and flavorful cowboy casserole featuring ground beef, kidney beans, and crispy tater tots, perfect for busy evenings and gatherings.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Add ground beef, onion, garlic, kidney beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper into the slow cooker.
  2. Stir everything together until well incorporated.
  3. Set slow cooker to low and cook for about 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, arrange frozen tater tots over the mixture.
  5. Sprinkle shredded cheddar cheese over the tater tots and cover until the cheese melts.
  6. Serve warm and enjoy!

Notes

For a vegetarian option, substitute ground beef with plant-based meat. Leftovers can be stored in an airtight container for 3-4 days in the refrigerator.
