- 1 lb ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup frozen tater tots
- 1 cup shredded cheddar cheese
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Add ground beef, onion, garlic, kidney beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper into the slow cooker.
- Stir everything together until well incorporated.
- Set slow cooker to low and cook for about 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, arrange frozen tater tots over the mixture.
- Sprinkle shredded cheddar cheese over the tater tots and cover until the cheese melts.
- Serve warm and enjoy!
Notes
For a vegetarian option, substitute ground beef with plant-based meat. Leftovers can be stored in an airtight container for 3-4 days in the refrigerator.
