Description
A hearty and filling slow cooker casserole featuring ground beef, beans, and a cheesy tater tot topping that the whole family will love.
Ingredients

- 1 lb ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10.5 oz) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1 packet taco seasoning
- 1 cup chopped onions
- 4 cups frozen tater tots
Instructions
- In a skillet, brown the ground beef and chopped onions over medium heat. Once browned, drain any excess fat.
- Transfer the cooked beef mixture into the slow cooker.
- Stir in the kidney beans, corn, diced tomatoes, and taco seasoning until well combined.
- Layer the frozen tater tots evenly on top of the mixture.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before serving, sprinkle the shredded cheddar cheese on top. Cover and let it melt.
- Serve warm and enjoy!
Notes
Add bell peppers or jalapeños for more flavor. For a lighter version, substitute ground beef with turkey or chicken.
