Description

A hearty and filling slow cooker casserole featuring ground beef, beans, and a cheesy tater tot topping that the whole family will love.


Ingredients

Scale
  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10.5 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 packet taco seasoning
  • 1 cup chopped onions
  • 4 cups frozen tater tots

Instructions

  1. In a skillet, brown the ground beef and chopped onions over medium heat. Once browned, drain any excess fat.
  2. Transfer the cooked beef mixture into the slow cooker.
  3. Stir in the kidney beans, corn, diced tomatoes, and taco seasoning until well combined.
  4. Layer the frozen tater tots evenly on top of the mixture.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. About 30 minutes before serving, sprinkle the shredded cheddar cheese on top. Cover and let it melt.
  7. Serve warm and enjoy!

Notes

Add bell peppers or jalapeños for more flavor. For a lighter version, substitute ground beef with turkey or chicken.
