Description

A cozy weeknight meal featuring roasted sweet potatoes and savory sausage glazed in a delicious honey garlic sauce.


Ingredients

  • 1 lb sausage (Italian or your choice)
  • 2 large sweet potatoes, peeled and diced
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the diced sweet potatoes with 2 tablespoons olive oil, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on a sheet pan, leaving space in the center for the sausage.
  4. In a small bowl, whisk together the honey, minced garlic, and a pinch of salt to make the honey garlic sauce.
  5. Add the sausage to the sheet pan with the sweet potatoes; drizzle the honey garlic sauce evenly over everything and gently toss to coat.
  6. Roast for 25–30 minutes, stirring once halfway through, until sweet potatoes are fork-tender and the sausage reaches 160°F (or cooked through).
  7. Serve hot, sprinkled with chopped parsley if using.

Notes

Cut sweet potatoes uniformly for even cooking and consider using room-temperature sausage for better browning. For extra sweetness, switch to broil for the last 1–2 minutes of cooking.
