- 2 large sweet potatoes, peeled and diced
- 3 tablespoons honey
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the diced sweet potatoes with 2 tablespoons olive oil, salt, and pepper until evenly coated.
- Spread the sweet potatoes in a single layer on a sheet pan, leaving space in the center for the sausage.
- In a small bowl, whisk together the honey, minced garlic, and a pinch of salt to make the honey garlic sauce.
- Add the sausage to the sheet pan with the sweet potatoes; drizzle the honey garlic sauce evenly over everything and gently toss to coat.
- Roast for 25–30 minutes, stirring once halfway through, until sweet potatoes are fork-tender and the sausage reaches 160°F (or cooked through).
- Serve hot, sprinkled with chopped parsley if using.
Notes
Cut sweet potatoes uniformly for even cooking and consider using room-temperature sausage for better browning. For extra sweetness, switch to broil for the last 1–2 minutes of cooking.
