Description

Rich, creamy, and bursting with flavor, this quick butter chicken recipe offers a perfect balance of spices for a comforting meal.

Ingredients

Scale
  • 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter (divided)
  • 6 garlic cloves, minced
  • 1 medium onion, diced
  • 1 (15-ounce) can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread and steamed rice for serving

Instructions

  1. Marinate the Chicken: In a bowl, combine chicken chunks, salt, garlic powder, paprika, curry powder, and Greek yogurt. Let it marinate for at least 30 minutes.
  2. Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through. Remove and set aside.
  3. Prepare the Sauce Base: In the same skillet, add 2 tablespoons of butter. Sauté minced garlic and diced onion until they’re translucent and fragrant.
  4. Build the Sauce: Pour in the tomato sauce, sugar, salt, and black pepper. Mix well and let it simmer for about 5 minutes.
  5. Season and Simmer: Add heavy cream, cayenne pepper (if using), garam masala, and the remaining curry powder. Stir until well combined and simmer for another 10 minutes, allowing flavors to meld.
  6. Finish with Butter: Stir in the last tablespoon of butter for richness.
  7. Serve and Enjoy: Top with chopped parsley if desired and serve hot over rice or with naan.

Notes

Make sure to marinate the chicken for enhanced flavor and tenderness. Adjust spices according to your taste preferences.
