  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ginger
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar in a large mixing bowl until the mixture is light and fluffy.
  3. Add the egg and vanilla extract, mixing until everything is combined.
  4. In another bowl, whisk together the flour, salt, and baking powder. Gradually incorporate this dry mix into the wet ingredients until just combined.
  5. In a separate bowl, combine the pumpkin puree, brown sugar, cinnamon, nutmeg, cloves, and ginger.
  6. Roll out the cookie dough and cut it into rounds.
  7. Place a teaspoon of the pumpkin filling in the center of half the rounds, then top them with another round.
  8. Crimp the edges to seal, and arrange the cookies on a baking sheet.
  9. Bake for 12-15 minutes, until the edges are golden.
  10. Allow to cool before serving.
