Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar in a large mixing bowl until the mixture is light and fluffy.
- Add the egg and vanilla extract, mixing until everything is combined.
- In another bowl, whisk together the flour, salt, and baking powder. Gradually incorporate this dry mix into the wet ingredients until just combined.
- In a separate bowl, combine the pumpkin puree, brown sugar, cinnamon, nutmeg, cloves, and ginger.
- Roll out the cookie dough and cut it into rounds.
- Place a teaspoon of the pumpkin filling in the center of half the rounds, then top them with another round.
- Crimp the edges to seal, and arrange the cookies on a baking sheet.
- Bake for 12-15 minutes, until the edges are golden.
- Allow to cool before serving.
