Description

A wholesome bowl of Pumpkin Overnight Oats capturing the comforting flavors of fall. Perfect for busy mornings with zero morning prep.

Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup milk (or your favorite plant-based milk)
  • 1/2 cup pumpkin puree
  • 1 tablespoon pumpkin spice
  • 1 tablespoon honey or maple syrup
  • 1/2 cup Greek yogurt (optional)
  • Chopped nuts or seeds for topping (optional)

Instructions

  1. In a medium bowl, combine the rolled oats, milk, pumpkin puree, pumpkin spice, honey (or maple syrup), and Greek yogurt if using. Stir until everything is well blended.
  2. Transfer the mixture into a jar or airtight container, making sure it’s sealed properly.
  3. Refrigerate overnight to allow the oats to soak up all the flavor.
  4. When you’re ready to enjoy, give the oats a good stir and, if you prefer, add a splash of extra milk for a creamier consistency.
  5. Top your oats with chopped nuts or seeds before diving in!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To freeze, portion into freezer-safe containers. Thaw in the fridge overnight when ready to enjoy.
