- 2 cups chopped bok choy

Instructions
- In a large pot over medium heat, pour in the chicken broth.
- Add the grated ginger and minced garlic. Allow it to simmer for about 5 minutes, letting the flavors infuse.
- Carefully add the potstickers to the bubbling broth. Cook them until they float to the surface, which should take about 5-7 minutes.
- Stir in the sliced carrots and chopped bok choy. Cook for an additional 3-5 minutes until the vegetables are tender but still vibrant.
- Season with soy sauce to taste and adjust as necessary.
- Just before serving, sprinkle with chopped green onions and drizzle a bit of sesame oil on top for that extra flair.
