Description

A cozy bowl of potsticker soup with savory broth, fresh greens, and delightful potstickers, perfect for weeknight dinners.

Ingredients

Scale
  • 1 package of potstickers (store-bought or homemade)
  • 4 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 cups fresh greens (spinach, bok choy, or similar)
  • 2 green onions, sliced
  • Soy sauce to taste
  • Salt and pepper to taste
  • Sesame oil for garnish
  • Chili oil (optional) for garnish

Instructions

  1. In a large pot, bring the chicken or vegetable broth to a gentle simmer over medium heat.
  2. Add the minced garlic and grated ginger, stirring for about 2-3 minutes until fragrant.
  3. Carefully drop the potstickers into the broth, allowing them to simmer for 5-7 minutes until they are cooked through.
  4. Toss in the fresh greens, cooking for an additional 2-3 minutes until wilted.
  5. Season with soy sauce, salt, and pepper to your taste.
  6. Serve hot, topped with sliced green onions, a drizzle of sesame oil, and chili oil if desired.

Notes

For a vegetarian option, use vegetable broth and ensure the potstickers are meat-free. This soup can be paired with a salad or served with rice or quinoa.
