- 4 cups chicken or vegetable broth
- 2 cloves garlic, minced
- 1 inch piece of ginger, grated
- 2 cups greens (bok choy or spinach)
- 1 carrot, sliced
- 2 green onions, sliced
- Soy sauce to taste
- Salt and pepper to taste
Instructions
- In a large pot, bring the broth to a gentle simmer over medium heat.
- Add the minced garlic and grated ginger, cooking for about a minute until aromatic.
- Incorporate the sliced carrots and greens, cooking until they’re just wilted.
- Gently add the dumplings to the pot and prepare them according to the package instructions.
- Finish by seasoning the soup with soy sauce, salt, and pepper to taste.
- Serve the soup hot, garnished with fresh slices of green onion.
Notes
For a gluten-free version, use tamari instead of soy sauce. You can also freeze leftovers for longer storage.
