Description

A warm, cozy potsticker soup filled with tender dumplings and a soothing broth, perfect for chilly evenings or when you’re feeling under the weather.


Ingredients

Scale
  • Dumplings (potstickers)
  • 4 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 2 cups greens (bok choy or spinach)
  • 1 carrot, sliced
  • 2 green onions, sliced
  • Soy sauce to taste
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the broth to a gentle simmer over medium heat.
  2. Add the minced garlic and grated ginger, cooking for about a minute until aromatic.
  3. Incorporate the sliced carrots and greens, cooking until they’re just wilted.
  4. Gently add the dumplings to the pot and prepare them according to the package instructions.
  5. Finish by seasoning the soup with soy sauce, salt, and pepper to taste.
  6. Serve the soup hot, garnished with fresh slices of green onion.

Notes

For a gluten-free version, use tamari instead of soy sauce. You can also freeze leftovers for longer storage.
