- 4 cups chicken or vegetable broth
- 2 cloves garlic, minced
- 1 inch piece of ginger, grated
- 2 cups fresh greens (such as spinach or bok choy)
- 2 green onions, sliced
- soy sauce to taste
- sesame oil (optional)
- salt and pepper to taste
Instructions
- In a large pot, heat the broth over medium heat until simmering.
- Stir in the minced garlic and grated ginger, cooking until fragrant, about a minute.
- Add the potstickers to the pot and bring everything to a gentle simmer.
- Allow the mixture to cook for about 5-7 minutes, or until the potstickers are thoroughly heated.
- Toss in the fresh greens and sliced green onions, cooking for an additional 2-3 minutes until the greens are wilted.
- Season the soup with soy sauce, sesame oil if using, and adjust the salt and pepper to taste.
- Serve hot, and enjoy every comforting bite!
Notes
For added protein, consider adding cubed tofu or cooked chicken. A squeeze of lime juice before serving can also enhance the flavors.
