Description

A comforting bowl of potsticker soup filled with tender potstickers, aromatic ginger, and fresh greens, perfect for any night of the week.


Ingredients

  • potstickers (frozen or homemade)
  • 4 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 2 cups fresh greens (such as spinach or bok choy)
  • 2 green onions, sliced
  • soy sauce to taste
  • sesame oil (optional)
  • salt and pepper to taste

Instructions

  1. In a large pot, heat the broth over medium heat until simmering.
  2. Stir in the minced garlic and grated ginger, cooking until fragrant, about a minute.
  3. Add the potstickers to the pot and bring everything to a gentle simmer.
  4. Allow the mixture to cook for about 5-7 minutes, or until the potstickers are thoroughly heated.
  5. Toss in the fresh greens and sliced green onions, cooking for an additional 2-3 minutes until the greens are wilted.
  6. Season the soup with soy sauce, sesame oil if using, and adjust the salt and pepper to taste.
  7. Serve hot, and enjoy every comforting bite!

Notes

For added protein, consider adding cubed tofu or cooked chicken. A squeeze of lime juice before serving can also enhance the flavors.
