Description

A comforting casserole combining juicy chicken, creamy soup, and fluffy rice, perfect for family dinners and potlucks.


Ingredients

Scale
  • 1½ cups long-grain white rice
  • 2 cans cream of chicken or mushroom soup
  • 1 cup water
  • 2 cups milk
  • 1 envelope onion soup mix
  • 1½ cups shredded cheddar cheese
  • 3 boneless skinless chicken breasts or thighs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F and grease your baking dish.
  2. In a large bowl, combine the rice, soup, milk, water, and onion soup mix. Pour into the greased baking pan.
  3. Sprinkle half the cheddar cheese into the mix and stir gently.
  4. Place the chicken on top and season with salt and pepper.
  5. Cover tightly with foil and bake for 1.5 to 2 hours.
  6. Remove foil, sprinkle remaining cheese, and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  7. Let sit for 15-20 minutes before serving.

Notes

Add frozen peas or diced bell peppers for extra nutrition. Consider using different cheeses for added flavor.
