- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable broth
- 1 package (9 ounces) cheese tortellini
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic and stir until fragrant, about 1 minute.
- Pour in the crushed tomatoes and vegetable broth, and bring to a boil.
- Stir in the tortellini and season with basil, oregano, salt, and pepper. Cook according to package instructions for 5-7 minutes, until tender.
- Remove from heat and stir in grated Parmesan cheese until melted.
- Serve hot, garnished with fresh basil leaves.
Notes
For extra flavor, sauté chopped carrots or celery with the onion. Adjust seasoning for a perfect balance.
