Description

A comforting blend of rich tomatoes, tender tortellini, and Parmesan cheese, perfect for cozy dinners and lunch.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth
  • 1 package (9 ounces) cheese tortellini
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and stir until fragrant, about 1 minute.
  3. Pour in the crushed tomatoes and vegetable broth, and bring to a boil.
  4. Stir in the tortellini and season with basil, oregano, salt, and pepper. Cook according to package instructions for 5-7 minutes, until tender.
  5. Remove from heat and stir in grated Parmesan cheese until melted.
  6. Serve hot, garnished with fresh basil leaves.

Notes

For extra flavor, sauté chopped carrots or celery with the onion. Adjust seasoning for a perfect balance.
