- 2 cups whole milk
- 1 1/2 cups water or broth
- 8 oz pasta (any shape)
- 8–10 oz broccoli, finely chopped
- 2 cups shredded extra sharp cheddar cheese
- 1/4 cup plain Greek-style yogurt
- 1 tbsp butter or ghee (optional)
Instructions
- In a large pot, bring the whole milk and water (or broth) to a rolling boil.
- Add the pasta and reduce the heat to a simmer. Cook for about 10 minutes or until the pasta is tender.
- Stir in the finely chopped broccoli and cook for an additional 2-3 minutes until the broccoli is bright green and tender.
- Remove the pot from heat and mix in the shredded cheese, Greek yogurt, and butter or ghee (if using). Stir until the cheese is completely melted and everything is well combined.
- Serve warm and enjoy your creamy, delicious dish!
Notes
For extra flavor, consider using broth instead of water. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
