Description

Delicious and healthy oatmeal protein cookies packed with nutrients, perfect for a snack or breakfast.


Ingredients

Scale
  • 1 cup whole-grain oats
  • 1/2 cup peanut butter (smooth or crunchy)
  • 1/4 cup honey or maple syrup
  • 1/4 cup chia seeds
  • 1/4 cup flaxseeds
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mix together the oats, peanut butter, honey or maple syrup, chia seeds, flaxseeds, vanilla extract, baking soda, and salt until everything is well combined.
  3. Scoop tablespoon-sized amounts of the dough onto a baking sheet lined with parchment paper, making sure to space them a few inches apart.
  4. Flatten each cookie slightly with the back of a spoon to give them a nice shape.
  5. Bake for 10-12 minutes, or until the edges are golden brown.
  6. Remove from the oven and let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage. Ensure peanut butter is at room temperature for easier mixing.
