- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender or food processor, blend 1/2 cup of the rolled oats until finely ground.
- In a mixing bowl, combine the blended oats, remaining rolled oats, flour, baking soda, and salt.
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the sugar mixture, mixing until well combined.
- Gradually mix in the dry ingredients until just incorporated. Be careful not to overmix.
- Fold in the chocolate chips until evenly distributed.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool slightly on the baking sheet before transferring to a wire rack to cool completely.
Notes
For best results, use old-fashioned rolled oats and consider chilling the dough before baking.
