- 3 ripe bananas, mashed
- 1/2 cup sour cream
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, cream the softened butter and sugar together until light and fluffy.
- Beat in the eggs one at a time, then stir in the mashed bananas, sour cream, and vanilla extract until well combined.
- In a separate bowl, mix together the flour, baking soda, and salt.
- Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just combined. If using, fold in the chopped walnuts.
- Pour the batter into your prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For a lighter version, you can substitute Greek yogurt for sour cream and reduce sugar if your bananas are very sweet. Store in an airtight container for up to 3 days or freeze slices for up to 3 months.
