Description

A delightful and easy recipe for banana bread that combines ripe bananas and creamy sour cream for a moist and fluffy texture.


Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the mashed bananas, sour cream, and vanilla extract until well combined.
  4. In a separate bowl, mix together the flour, baking soda, and salt.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just combined. If using, fold in the chopped walnuts.
  6. Pour the batter into your prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For a lighter version, you can substitute Greek yogurt for sour cream and reduce sugar if your bananas are very sweet. Store in an airtight container for up to 3 days or freeze slices for up to 3 months.
