- 2 ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, mix the melted butter with the mashed bananas until well combined.
- Stir in the sugar, followed by the beaten egg and vanilla extract.
- Sprinkle the baking soda and a pinch of salt over the mixture, then gently fold them in.
- Gradually add the flour, stirring until just incorporated—avoid overmixing.
- Spoon the batter into the lined muffin cups, filling each about two-thirds full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool before serving.
Notes
Best served with coffee or tea. Can be stored in an airtight container for up to 3 days.
