Description

Delightfully soft and buttery muffins made with ripe bananas, perfect for breakfast or a snack.


Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, mix the melted butter with the mashed bananas until well combined.
  3. Stir in the sugar, followed by the beaten egg and vanilla extract.
  4. Sprinkle the baking soda and a pinch of salt over the mixture, then gently fold them in.
  5. Gradually add the flour, stirring until just incorporated—avoid overmixing.
  6. Spoon the batter into the lined muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool before serving.
