A comforting and creamy chicken casserole topped with crunchy Ritz crackers, perfect for family dinners or potlucks.

- 4½ cups chopped cooked chicken
- 4 oz cream cheese, room temperature
- 1 cup cottage cheese
- ½ cup sour cream
- 1 (10.5 oz) can unsalted cream of chicken soup
- ¼ tsp garlic powder
- ¼ tsp dried onion powder
- 1 sleeve Ritz crackers, crushed
- 5 Tbsp butter, melted
Instructions
- Preheat your oven to 350ºF. Lightly spray a 9×9-inch baking dish with cooking spray and set aside.
- In a large bowl, combine the chopped cooked chicken, cream cheese, cottage cheese, sour cream, garlic powder, dried onion powder, and the can of unsalted cream of chicken soup. Mix until evenly blended.
- Spread the chicken mixture evenly into the prepared 9×9-inch pan.
- In a small bowl, mix the crushed Ritz crackers with the melted butter until well coated. Sprinkle the cracker mixture evenly over the chicken filling.
- Bake uncovered for 30 to 40 minutes until bubbly and golden brown. Let rest for 5 minutes before serving.
Notes
For dairy-free version, use dairy-free cream cheese and substitute cottage cheese with plain Greek yogurt. You can also use shredded rotisserie chicken to save time.
