- 2 large Chicken Breasts, boneless, skinless, sliced thinly
- Salt and Pepper, to taste
- 2 tbsp Olive Oil, for searing
- 3 cloves Garlic, minced
- 1/3 cup Sun-Dried Tomatoes, chopped
- 1/2 cup Chicken Broth
- 1 cup Heavy Cream
- 1/2 cup Parmesan Cheese, freshly grated
- 1 tsp Italian Seasoning
- 1/2 tsp Crushed Red Pepper Flakes (optional)
- 8 oz Pasta (penne, rigatoni, or fettuccine)
- Fresh Basil, for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper and sear on both sides until golden, about 5 minutes per side. Remove chicken and set aside.
- In the same skillet, add minced garlic and chopped sun-dried tomatoes and sauté for about a minute until fragrant.
- Pour in chicken broth and bring to a simmer. Stir in heavy cream, Italian seasoning, and Parmesan cheese, allowing the mixture to thicken for a few minutes.
- While the sauce simmers, cook pasta according to package instructions. Drain and add to the skillet with the sauce, followed by the chicken. Toss until well coated.
- Plate the pasta, topping with freshly grated Parmesan and a sprinkle of fresh basil.
