Description

A delicious creamy pasta dish featuring succulent chicken, sun-dried tomatoes, and rich Parmesan cheese, perfect for date nights.


Ingredients

  • 2 large Chicken Breasts, boneless, skinless, sliced thinly
  • Salt and Pepper, to taste
  • 2 tbsp Olive Oil, for searing
  • 3 cloves Garlic, minced
  • 1/3 cup Sun-Dried Tomatoes, chopped
  • 1/2 cup Chicken Broth
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, freshly grated
  • 1 tsp Italian Seasoning
  • 1/2 tsp Crushed Red Pepper Flakes (optional)
  • 8 oz Pasta (penne, rigatoni, or fettuccine)
  • Fresh Basil, for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper and sear on both sides until golden, about 5 minutes per side. Remove chicken and set aside.
  2. In the same skillet, add minced garlic and chopped sun-dried tomatoes and sauté for about a minute until fragrant.
  3. Pour in chicken broth and bring to a simmer. Stir in heavy cream, Italian seasoning, and Parmesan cheese, allowing the mixture to thicken for a few minutes.
  4. While the sauce simmers, cook pasta according to package instructions. Drain and add to the skillet with the sauce, followed by the chicken. Toss until well coated.
  5. Plate the pasta, topping with freshly grated Parmesan and a sprinkle of fresh basil.

Notes

Let the chicken rest after searing for the most tender results. Freshly grated Parmesan enhances flavor and texture.
