- 2 large boneless, skinless chicken breasts, sliced thinly
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 8 ounces pasta (penne, rigatoni, or fettuccine)
- Fresh basil, for garnish
Instructions
- Season the sliced chicken breasts with salt and pepper.
- In a large skillet over medium-high heat, add olive oil. Once hot, sear the chicken for about 5-7 minutes until golden. Remove and set aside.
- In the same skillet, add minced garlic and chopped sun-dried tomatoes. Cook for 1-2 minutes until fragrant.
- Pour in chicken broth and heavy cream. Stir to combine, then add Italian seasoning and crushed red pepper flakes. Let it simmer for a few minutes.
- Return the chicken to the skillet, and mix in the cooked pasta. Stir until everything is well coated in the creamy sauce. Finally, sprinkle in the freshly grated Parmesan cheese.
- Garnish with fresh basil before serving.
Notes
Serve with garlic bread and a fresh green salad for a complete meal. Leftovers can be stored in the fridge for up to three days or frozen for two months.
