Description

A charming dish combining tender chicken breasts with a creamy, sun-dried tomato sauce, perfect for date nights or family dinners.


Ingredients

  • 2 large boneless, skinless chicken breasts, sliced thinly
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 8 ounces pasta (penne, rigatoni, or fettuccine)
  • Fresh basil, for garnish

Instructions

  1. Season the sliced chicken breasts with salt and pepper.
  2. In a large skillet over medium-high heat, add olive oil. Once hot, sear the chicken for about 5-7 minutes until golden. Remove and set aside.
  3. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Cook for 1-2 minutes until fragrant.
  4. Pour in chicken broth and heavy cream. Stir to combine, then add Italian seasoning and crushed red pepper flakes. Let it simmer for a few minutes.
  5. Return the chicken to the skillet, and mix in the cooked pasta. Stir until everything is well coated in the creamy sauce. Finally, sprinkle in the freshly grated Parmesan cheese.
  6. Garnish with fresh basil before serving.

Notes

Serve with garlic bread and a fresh green salad for a complete meal. Leftovers can be stored in the fridge for up to three days or frozen for two months.
