Description

A comforting low carb casserole made with ground beef, bell peppers, and gooey cheeses, perfect for busy weeknights.


Ingredients

  • 2 lbs ground beef (80/20 fat ratio preferred)
  • 1 large onion (diced)
  • 2 large bell peppers (green, red, or mixed, diced)
  • 2 cloves garlic (minced)
  • 8 oz cream cheese (softened to room temperature)
  • 2 tbsp Worcestershire sauce
  • Salt and pepper (to taste)
  • 8 oz provolone cheese (sliced)
  • 1.5 cups mozzarella cheese (shredded)
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 baking dish with non-stick spray.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the diced onions and bell peppers to the skillet and cook for 5-6 minutes until they’re fragrant and beginning to soften.
  4. Stir in the minced garlic and cook for an additional 30 seconds.
  5. Add the ground beef to the skillet, breaking it up as it cooks. Sprinkle generously with salt and pepper, cooking for about 7-8 minutes until browned and no longer pink. Drain any excess fat if necessary.
  6. Stir in the Worcestershire sauce until the meat is evenly coated. Reduce the heat to low and add the softened cream cheese, stirring until smooth and creamy.
  7. Transfer the mixture to your prepared baking dish, spreading it evenly. Layer the torn provolone over the beef mixture, then sprinkle the shredded mozzarella on top.
  8. Bake for 22-25 minutes, or until the cheese is melted and bubbly with a light golden hue. Let it rest for 5 minutes before serving.

Notes

For added flavor, sear the beef before adding it to the skillet. You can prepare the ground beef mixture a day ahead and refrigerate it.
