Ingredients

  • 2 cups water
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup zucchini, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, pour in the vegetable broth and water, then bring it to a boil.
  2. Add the diced carrots, celery, chopped onion, and minced garlic to the pot. Lower the heat and let it simmer for about 10 minutes until the vegetables are tender.
  3. Stir in the diced zucchini, oregano, thyme, salt, and pepper. Allow everything to simmer for another 5-10 minutes.
  4. Taste your soup and adjust the seasoning if needed.
  5. Serve it hot, garnished with fresh parsley.
