Description

A quick and comforting dish marrying tangy Dijon mustard with sweet honey, elevating chicken breasts into a delightful culinary experience.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, combine honey and Dijon mustard.
  3. Season the chicken breasts with salt and pepper on both sides.
  4. Heat olive oil in a skillet over medium heat and sear the chicken for 3-4 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and pour the honey-mustard mixture over it; cover with foil.
  6. Bake in the preheated oven for 25-30 minutes until cooked through (internal temperature of 165°F / 75°C).
  7. Serve over cooked rice and garnish with fresh parsley, if desired.

Notes

For added flavor, marinate the chicken in the honey-mustard mixture for an hour before cooking.
