- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup Dijon mustard
- Salt and pepper to taste
- 2 cups cooked rice
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, combine honey and Dijon mustard.
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a skillet over medium heat and sear the chicken for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and pour the honey-mustard mixture over it; cover with foil.
- Bake in the preheated oven for 25-30 minutes until cooked through (internal temperature of 165°F / 75°C).
- Serve over cooked rice and garnish with fresh parsley, if desired.
Notes
For added flavor, marinate the chicken in the honey-mustard mixture for an hour before cooking.
