Description

A simple yet flavorful honey mustard chicken dish served over fluffy rice, perfect for busy weeknights or gatherings.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup mustard (yellow or Dijon)
  • 1 tablespoon olive oil
  • 2 cups cooked rice
  • Salt and pepper to taste
  • Optional: Chopped parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the honey and mustard until well-combined.
  3. In an oven-safe skillet, heat the olive oil over medium heat.
  4. Season the chicken breasts generously with salt and pepper, then add them to the skillet.
  5. Sear each side of the chicken for about 5 minutes or until it reaches a golden-brown color.
  6. Pour the honey-mustard sauce over the seared chicken.
  7. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is fully cooked.
  8. Serve the chicken over the cooked rice, drizzling it with any extra sauce and garnishing with parsley if desired.

Notes

Let the chicken rest for a few minutes after cooking to keep it tender. Feel free to experiment with different mustards or add fresh herbs.
