- 2 poached chicken breasts, shredded
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup fresh spinach or kale
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat a splash of olive oil over medium heat.
- Sauté the onions, carrots, and celery until they are softened, about 5-7 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring the mixture to a boil.
- Stir in the shredded chicken, thyme, and rosemary. Season with salt and pepper.
- Allow the soup to simmer for about 20 minutes, or until the vegetables are tender.
- Add in the fresh spinach or kale, cooking until just wilted.
- Adjust seasoning to taste, then garnish with fresh parsley before serving.
Notes
For a heartier soup, consider adding noodles or rice. This soup can be stored in the refrigerator for 3-4 days and freezes well for up to 3 months.
