Description

A comforting classic homemade chicken soup infused with tender chicken, vibrant vegetables, and aromatic herbs.


Ingredients

  • 2 poached chicken breasts, shredded
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup fresh spinach or kale
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat.
  2. Sauté the onions, carrots, and celery until they are softened, about 5-7 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Stir in the shredded chicken, thyme, and rosemary. Season with salt and pepper.
  6. Allow the soup to simmer for about 20 minutes, or until the vegetables are tender.
  7. Add in the fresh spinach or kale, cooking until just wilted.
  8. Adjust seasoning to taste, then garnish with fresh parsley before serving.

Notes

For a heartier soup, consider adding noodles or rice. This soup can be stored in the refrigerator for 3-4 days and freezes well for up to 3 months.
