Description

A cozy and nutritious soup that combines the comforting flavors of traditional lasagna into a hearty bowl, perfect for busy weeknights.


Ingredients

  • 1 lb ground turkey or chicken
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 tsp Italian seasoning
  • 8 oz whole wheat lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. In a large pot, heat over medium and brown the ground turkey or chicken, breaking it up as it cooks.
  2. Add in the diced onion and minced garlic, sautéing until softened and fragrant.
  3. Pour in the crushed tomatoes, chicken or vegetable broth, and Italian seasoning; bring it to a gentle boil.
  4. Toss in the broken lasagna noodles, cooking until they are tender, about 10-12 minutes.
  5. Stir in the ricotta cheese and allow it to simmer for a few minutes, blending the flavors.
  6. Season with salt and pepper to taste, then serve hot, topped with mozzarella cheese and fresh basil if desired.
