Description

A quick and hearty pasta dish combining lean ground beef, Greek yogurt, and Parmesan cheese, perfect for busy weeknights.


Ingredients

  • 8 oz penne pasta
  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Olive oil (for cooking)

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant (about 2-3 minutes).
  3. Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
  4. Stir in the diced tomatoes (with their juices), beef broth, Greek yogurt, grated Parmesan cheese, Italian seasoning, salt, and pepper. Allow the mixture to simmer for a few minutes to combine the flavors.
  5. Add the cooked pasta to the skillet with the beef mixture. Toss everything together until well combined.
  6. Serve your creamy beef pasta garnished with fresh basil or parsley.

Notes

This dish can be made dairy-free with plant-based yogurt and nutritional yeast. Store leftovers in an airtight container for up to 3 days.
