Description

A delightful and hearty dish featuring ground beef, roasted sweet potatoes, and rice, perfect for family dinners or meal prep.


Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes
  • 2 cups rice
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp olive oil
  • Optional toppings (e.g., cheese, avocado, vegetables)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into small cubes. Toss them with olive oil, salt, and pepper.
  3. Arrange sweet potatoes on a baking sheet and roast for 25-30 minutes until tender and golden.
  4. While sweet potatoes roast, cook rice according to package instructions.
  5. In a skillet over medium heat, brown the ground beef (or turkey) until fully cooked, seasoned with salt and pepper.
  6. To assemble, start with rice, layer on roasted sweet potatoes and ground beef, then add desired toppings.

Notes
