Description

A comforting bowl of hearty beef and barley soup featuring tender beef, wholesome pearl barley, and fresh vegetables.


Ingredients

  • 1 pound beef stew meat
  • 1 cup pearl barley
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 2 cups water
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the beef stew meat over medium heat until it’s well-seared.
  2. Add the chopped onion, carrots, celery, and minced garlic. Cook until the onions are translucent.
  3. Stir in the pearl barley, beef broth, water, thyme, bay leaf, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat to low. Let it simmer for about 90 to 120 minutes, or until the beef is tender.
  5. Remove the bay leaf before serving.
  6. Garnish with fresh parsley and enjoy your hearty soup!

Notes

Pair with crusty bread or a side salad. Consider adding grated Parmesan for a creamy touch or hot sauce for an extra kick.
