- 1 pound beef stew meat
- 1 cup pearl barley
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 6 cups beef broth
- 2 cups water
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the beef stew meat over medium heat until it’s well-seared.
- Add the chopped onion, carrots, celery, and minced garlic. Cook until the onions are translucent.
- Stir in the pearl barley, beef broth, water, thyme, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Let it simmer for about 90 to 120 minutes, or until the beef is tender.
- Remove the bay leaf before serving.
- Garnish with fresh parsley and enjoy your hearty soup!
Notes
Pair with crusty bread or a side salad. Consider adding grated Parmesan for a creamy touch or hot sauce for an extra kick.
