Description

A comforting casserole combining ground beef, tender potatoes, and gooey cheese, perfect for weeknight dinners or gatherings.


Ingredients

  • 1 pound ground beef
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and dice the potatoes into uniform cubes. Chop the onion and mince the garlic cloves.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant.
  4. Add the ground beef, seasoning it with salt, black pepper, thyme, and paprika. Cook until browned.
  5. Pour in the beef broth, stir, and let simmer for a few minutes to meld flavors. Remove from heat.
  6. In a mixing bowl, combine the diced potatoes with the beef mixture. Fold in the sour cream and half of the cheddar cheese.
  7. Transfer the mixture to a baking dish and cover with the remaining cheddar cheese.
  8. Cover tightly with foil and bake for 30 minutes.
  9. Remove foil and bake an additional 10-15 minutes until cheese is melted and bubbly.
  10. Allow to rest for 10 minutes before serving.

Notes

For variations, consider adding diced bell peppers or using ground turkey for a lighter option.
