Description

A delightful and easy appetizer made with sweet mini peppers and creamy goat cheese, perfect for any gathering.


Ingredients

Scale
  • 1 pound mini sweet bell peppers (about 12 peppers)
  • 10 ounces goat cheese
  • Balsamic glaze, for drizzling
  • Honey, for drizzling
  • 2 tablespoons fresh thyme (or dried if fresh isn’t available)
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the mini peppers thoroughly.
  3. Cut each pepper in half lengthwise and remove the seeds along with any white flesh you find inside.
  4. Scoop a couple of portions of goat cheese into each pepper half.
  5. Arrange the filled peppers in a single layer on a baking dish or sheet.
  6. Bake in the preheated oven for 20-25 minutes, or until the peppers are lightly browned and soft.
  7. Transfer the roasted peppers to a serving platter. Drizzle with balsamic glaze and honey, sprinkle with fresh thyme, and add freshly ground black pepper to taste.
  8. Serve warm and enjoy!
