Ingredients

- 1 can chickpeas (drained and rinsed)
- 4 cups vegetable broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, minced garlic, diced carrots, and celery. Sauté until softened, about 5-7 minutes.
- Stir in the cumin and paprika, cooking for an additional minute.
- Add the drained chickpeas and the vegetable broth to the pot.
- Bring everything to a boil, then reduce the heat and let it simmer for 15-20 minutes.
- Use an immersion blender to puree the soup to your desired consistency.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
