Ingredients

  • 1 cup white rice
  • 2 cups beef broth
  • 1 can French onion soup
  • 1 cup shredded cheese (e.g., mozzarella or Swiss)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onions are translucent.
  3. Stir in the ground beef, seasoning generously with salt and pepper. Cook until the beef is browned.
  4. Pour in the rice, beef broth, and French onion soup, mixing well and bringing to a gentle simmer.
  5. Transfer the mixture into a greased casserole dish.
  6. Sprinkle the shredded cheese on top.
  7. Cover the dish with foil and bake for 25-30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
  9. Allow to cool slightly before serving.
