Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

  3. In a separate bowl, cream the softened butter and sugar together until light and fluffy.
  4. Beat in the egg, vanilla extract, and espresso powder, mixing thoroughly.
  5. Gradually incorporate the dry ingredients, mixing until just combined. Fold in chocolate chips if desired.

  8. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free blend. Use vegan butter for a dairy-free option.
