Description

A comforting shepherd’s pie casserole made with ground beef and creamy mashed potatoes, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, brown the ground beef. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes, or until the onions are softened.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, and season with salt and pepper. Let this mixture simmer for 5-7 minutes until it thickens slightly.
  5. Transfer the beef mixture to a casserole dish, spreading it evenly across the bottom.
  6. Top with your prepared mashed potatoes, spreading them to cover the filling completely.
  7. Dot the mashed potatoes with butter and sprinkle with shredded cheddar cheese if desired.
  8. Bake in the preheated oven for 20-30 minutes, or until the top is golden and bubbly.
  9. Allow it to cool for 5 minutes before serving.

Notes

For a leaner option, substitute ground turkey. Use pre-made mashed potatoes for a quick preparation.
