- 1 cup packed brown sugar
- 1 cup granulated sugar
- 0.5 cup evaporated milk
- 0.25 cup boiling water
- 4 tablespoons unsalted butter, cubed
- 1 teaspoon vanilla extract
- 1.5 cups toasted and coarsely chopped pecans
Instructions
- In a heavy-bottomed saucepan, combine the brown sugar, granulated sugar, evaporated milk, and boiling water. Stir until well integrated.
- Place the saucepan over medium heat. Stir continuously to dissolve the sugars and achieve a smooth mixture.
- Allow the mixture to boil, stirring occasionally, until it reaches the soft-ball stage (238-240°F).
- Remove from heat, then immediately stir in the cubed butter and vanilla extract until fully melted.
- Add the toasted and chopped pecans, stirring until well combined and the mixture begins to thicken.
- Quickly drop spoonfuls of the warm mixture onto prepared waxed or parchment paper in 2-3 inch rounds. Shape as needed with two spoons.
- Let the pralines cool completely before peeling them off the paper.

Use a candy thermometer for accurate cooking. Allow pralines to cool slowly for perfect texture.
