- 1 cup rolled oats
- 1 cup almond flour
- 1/2 cup maple syrup or agave nectar
- 1/4 cup coconut oil, melted
- 1/2 cup chocolate chips
- 1 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine rolled oats, almond flour, baking soda, and salt.
- In another bowl, mix maple syrup, melted coconut oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Fold in the chocolate chips.
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool for a few minutes before transferring to a wire rack.
Notes
For chewier cookies, do not overmix the dough after adding wet ingredients. Customize with different chocolate types or spices.
