- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups fresh spinach or kale
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh herbs (like parsley or dill) for garnish
Instructions
- In a large pot, place the chicken breasts and pour in the chicken broth. Bring to a boil, then lower the heat and let it simmer for about 20 minutes.
- Carefully remove the chicken, shred it into bite-sized pieces, and set it aside.
- In the same pot, toss in the carrots, celery, onion, and garlic. Sauté for about 5 minutes or until they soften up.
- Return the shredded chicken to the pot along with the spinach or kale, thyme, bay leaf, salt, and pepper.
- Allow everything to simmer together for another 10 minutes.
- Before serving, take out the bay leaf, garnish with fresh herbs, and enjoy hot!
Notes
For richer flavor, try browning the chicken slightly before boiling it. Feel free to customize the thickness of your soup by adding more or less broth. A squeeze of lemon juice before serving can brighten the flavors.
